Earlier in the week I had some fun on another forum with a thread called "The Art of Barbecue" started by N9man, thought it might be fun to continue it here. So direct from the thirdeye gallery.....[p]dsc01533abboil.jpg[p]dsc03257a.jpg[p]Happy Woosday

Awesome looing cooks Thirdeye. [p]This ia my first briskit, and was disapointed. IT was little dry and we like our beef on the rare side anyway so I guess this will be our last briskit. [p]100_0286.jpg[p]Pork Butt Mike

Rick's Tropical Delight,
Great pictures and everything looooks sooo good. Tell me what you have the stuffed tomatoes grilling on and where can you order one. Thanks

• Letts-Do-It,
those are disposable grill toppers from meijers or walmart, and probably several other stores. they come in a variety of shapes and sizes. best get a good supply, since most stores don't stock grilling stuff in the winter... or wash them and reuse.

Oh Oh, I used several filters and a couple of layers. Send someone over to spank and tickle me too!

thirdeye,
I've lost the touch for taking pics...not enough practice lately. Some Pork tenderloin Medallions and a ribeye last night with sliced Portabellas. Not much of a pic, but it tasted good![p]Mike[p]IMG_3272.jpg[p]IMG_3274.jpg

• Pork Butt Mike,
Not trying to be an expert cause I'm not. But I just did my best one in 20 years Monday. I can see in your photos that you've cut the slices with the grain. They will be much more tender if you cut thin slices against the grain. Brisket is the toughest cut of beef and it needs to reach at least 185 degrees internal to break down the tissue and get real tender.

Photo Egg,
it's scratch-n0sniff, too. go ahead, try it. i embedded maillard esters into the pixel information, and if you have a touch-sensitive screen, you can smell the steak.

Another TRI-TIP - I'm getting hooked on these, thanks to my neighbor from California.[p]We had doubts about this as it had marinated and sat in the frig longer than usual.
A local butcher said it was still good to go!
For this reason, we were shooting for a 'medium'.

• thirdeye, That's some darn, good lookin' food! It's kinda, almost cocktail hour here and a few of your shots (pix) appear to have suffered some kind of upload distortion. Oh well, perhaps they'll look better after a few "cold" ones! Do you recommend beer, vodka or tequila? 8 - )[p]Rascal
