those are disposable grill toppers from meijers or walmart, and probably several other stores. they come in a variety of shapes and sizes. best get a good supply, since most stores don't stock grilling stuff in the winter... or wash them and reuse.

Pork Butt Mike,
Not trying to be an expert cause I'm not. But I just did my best one in 20 years Monday. I can see in your photos that you've cut the slices with the grain. They will be much more tender if you cut thin slices against the grain. Brisket is the toughest cut of beef and it needs to reach at least 185 degrees internal to break down the tissue and get real tender.

it's scratch-n0sniff, too. go ahead, try it. i embedded maillard esters into the pixel information, and if you have a touch-sensitive screen, you can smell the steak.

Another TRI-TIP - I'm getting hooked on these, thanks to my neighbor from California.[p]We had doubts about this as it had marinated and sat in the frig longer than usual.
A local butcher said it was still good to go!
For this reason, we were shooting for a 'medium'.
