    country rib roast split into ribs and loin ( i seen a list of cuts the other day, looks like this cut comes from the shoulder end of the loin, not the back end, more fat and notice the distinct color difference from tob to bottom on the loin). smoked ham with cheesy potatoes was the side. last night was the ham on pizza, the dough was lousy and wont be buying that brand again. tried expanded metal for the lump grate over the last 6 or so months, it fell apart during the pizza cook, the center melted right out of it.[p]100_1422.jpg

    <p />thirdeye,[p]The inlaws (outlaws if you ask me) were in over the weekend, Although they think I'm crazy for spending the $ I have spent on my eggs, I may have won some pionts with this rolled flank steak.[p]It is stuffed with fresh basil and mint, rosted red peppers and blue cheese. I served it over a bed of wild rice (sorry no pictures as they already think I am weird for taking this picture).[p]Smokey

    Tasted good but I cooked them too hot and not enough oil. Also I didn't remove the old hickory chunks from the earlier brisket and that flavor didn't help. But that's what they make "next times" for.[p]Spring "Learning, Re-learning, Un-learning and Forgetting All The Time" Chicken

    I did those using RTD shrimp method. Oil, garlic, salt, and cilantro as a marinade. I cooked them direct on one of those disposable grids you can find at Walmart for a dollar. Just put them on the grid and mixed em around a bit with some tongs.

    The hocks look great, I should do some for myself because Diana won't eat them, he he.[p]I've been cooking breads and BBQ, the regular stuff but a few days ago tri-tip was on sale so I got a small one to marinate in Veri Veri Teriyaki by Soy Vay. Here's the beef.

    For the first time in a long time, I got to fire up the Egg last night. I've been a tad busy trying to get orders out and getting a landscape in. [p]On this past Friday night, all there was in my back yard was some newly installed metal edging and some old plantings that hung on throughout the construction of our new home. The site was one of a previous home that burned three years or so ago, and was built upon only last summer. There was no grass to speak of and nothing but dirt for three dogs to play in.

    By Saturday afternoon, this was essentially the result. I had three of my employees help me with the installation. Needless to say, the dogs and Mrs. Ranger are pleased to see some green other than just the Egg back there.
