eroc,[p]That's a beautiful picture. And you got those suckers nice and thick, too. You know, done correctly, you can make a very inexpensive center cut pork chop taste like a very expensive cut of beef - which is exactly what it looks like you did there![p]Cheers,[p]TRex

BENTE,[p]I just love that pic. I had a similar birthday cake a few years ago - the Egg on the cake was actually a clue to what my present was! And that's the story of how the Small Egg came to join the family . . . [p]Cheers,[p]TRex

SMITTYtheSMOKER,[p]Oh, it was a delicious bark and the smoke ring sunk in 1/4" to 1/2", but was juicy everywhere except the very bottom of the bottom two butts (gotta add indirect heat).[p]I wrote up the entire cook here:[p]http://www.friday.com/bbum/2006/12/10/does-35-lbs-of-boston-butt-fit-on-a-bge/[p]

TRex,
AAAAARGH!!! No, I don't have a guru. And during this cook, BOTH of my probes went wacko. I woke up about 3am and my Maverick was reading 190F air temp at butt level. I got up and went to poke through the holes in the bottom vents to move the lump around. HOLY CRAP! My Accutemp probe in the large butt was reading 131F!!!! I freaked out, still being half drunk and half asleep. I'm 8 hours into this cook, my grate temp never got below 190F... WT_? 16 pounds of pork down the tubes??? So I grab my new Polder instand read thingy and start pokin'. 147-153F, perfect plateau temp. Heart rate and blood pressure start to return to normal at that point. Too wired to get back to sleep for half an hour or so. Then, about 0700, my Maverick alarms on 290F grate temp. Crap! Back down the stairs with the headlight on. Egg is purring away at 255ish. WHAT??? I unplugged the stupid thing, put on a pot of coffee, and dreamed intently on Santa showing up with a Guru before I cook butts again....[p]Anyone care to purchase two temperature probes? Great price...[p]
