I just ordered 2 meat sticks from the CGS.

I see the recipe calls for loin but yours looks more like butt which would be traditional. Except I’m not seeing much fat in the pan. Which did you use?

So I decided to check out some recipes and most called for loin.

I used about a four pound piece of butt.

The recipes I saw called for butt, but apparently, loin is fine too. I found a pretty good video taking you thru the whole process (cooked in an oven). The ingredients were similar, but not identical to the recipe @Eggty posted.

Focker I believe has posted a great recipe foral pastor but it was done on the Joetissierie. I can't seem to find it currently to verify if it was he who had posted it. If he sees this maybe he can post it again. It was fantastic.
