My parents are here for my dad's birthday today. Up at 6AM, got the large rolling at 275 with a rack of spare ribs, cooking these babies texas style; salt, pepper, water/cider vinegar spritz every 45 minutes. Will be crutching at the 2.5hr mark. Loading a whole chicken here in the next hour. At noon I'll be throwing a 4lb pork shoulder on for pull pork nachos for tonights game. Egg will be running nonstop all day with the flameboss keeping it right at 275.

Almost forgot. I managed to get some wings before they sold out... hot wings will go on at 5PM!

Started the lump at 1am and settled at 275 within an hour. I'm using RO with some hickory chunks. It's 7am now and I've wrapped the butts in foil and will check them when they hit 195.

Ribs are right at the 2.5hr mark, here they are just before the wrap. Just set the chicken in place.

Up now but started this 10# pork butt around 11:30 PM (EST) and it is now at 185*F-aiming for an early afternoon finish.
Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
I started my egg at 9, only cooking a chuck roast and a few chickens, the crew won't be over until 4pm, so I've got plenty of time. Looking forward to all the great cooks that are sure to come today, including yours!

Someone recently made an observation that "cooking Q is analog, not digital." If you go with that approach it should ease the concerns about the observed variances that we can now measure if desired. Started up the egg at 6am, just checked it's sitting at 156, coming along nicely. I'm aiming to be able to FTC for at least an hour before eating!

8 hours in and looking great! Finally passed the stall it was in for 2+ hours at 163 IT and now up to 172 IT.

@horoegg - patience is the watchword. You can get a second stall in the high 180's-low 190's. You can always dial up the temp to punch it home if needed. FWIW-
