Great Ribs, and then a Question About South African Braais...

Brethren,
We have a new nanny coming to live with us from South Africa, and I'd like her first meal with us to be a braai-inspired smoke/bbq/grilling.
Do any of you have any experience or knowledge of traditional South African Afrikaaner braais? I generally use a Big Green Egg, but I've also got a Pit Barrel Cooker as well.
Any and all comments or suggestions appreciated!
I thought I'd post yesterday's pork ribs as well. They were some of the best looking and best tasting ribs I've ever done. I followed Meathead's Last Meal Ribs recipe, including making the Memphis Dust. Only mod I did was spritzing them ever 30 mins after the initial bark set with a mix of apple cider vinegar, Texas Pete, and water. It was a real winner!

A traditional South African braai is meat cooked over an open wood fire. Wood is only used as a heat source and not to impart any smoke flavor. Lamb chops are popular either shoulder or cutlets. The traditional sausage is "Boerewors" I would suggest googling "Traditional South African Braai recipes" as there are plenty of variations and sides to accompany a braai. Good luck.. Here are a few pics of a typical SA braai, as you can see the fire is just a bed of coals. The last pic is making boerewors. In the meat tray pic is a combo of pork, lamb and steak, also some curry flavored chicken sosaties (kabobs) on the side.. Hope this helps..Greensboro North Carolina

You're the man, John - many thanks! Our local Costco carries lamb cutlets, that will be a start. I will try (though my expectations are low) the local butchers around here for some boewors, they look great.

Don't get your hopes up too much where South African beer is concerned. As a local explained to me in Pretoria, "our beer isn't very good - but it has the unique ability to give you a hangover that lasts 2 days. I haven't found that to be true of beer from any other country."
