Chili & cornbread...

Morning All:
Ever since we had that one day of "cool" (for Florida) weather a couple weeks ago Kathy has been asking for some chili & I (usually) do what she asks...Start with a 3.3 pound chuck roast (normally use Hanger Steak, but didn't get by Restaurant Depot this week) & trim/cut into nice sized bites (ended up with 2.5 pounds of meat chunks)...
Used some DP Game-On rub on the meat then into the hot Dutch Oven with a spoon for bacon grease to brown the meat & onions...
Next add the tomatoes, tomato sauce & paste, plus various spices...this simmers for about 4 hours...
Once the meat chunks are mostly tender, pull the DO to keep warm on the stove, crank up the Egg temp & add a pan of cornbread...
It was GOOOOOOD...my almost finished bowl with a second piece of cornbread...
Have just enough left over for a meal later this week before heading to the Mini-Fest on Friday!

I used chuck in the past (before I found hanger steaks) & had good results (but smoking & then cutting up is a good idea)...this one just didn't get as tender as I thought it would (never had that problem with hanger steaks, so will stick with that in the future)Have a GREAT day!
