USDA Prime Beef Ribs

We have a new Costco store and yesterday I picked up some steaks and brisket, but couldn't pass up the meaty beef ribs with nice marbling. I fired up the Small Egg this morning and gave the ribs a nice dusting of kosher salt and ground pepper after coating them with mustard. Pecan chunks got the nod today for an additional layer of flavor. Now we wait.
Any road will take you there if you don't know where you're going.

I suspect the tenderizing process is so automated that there is no selectivity so everything gets the auto Jaccard. But that is purely speculation. Perhaps someone has been behind the curtain and has profound knowledge.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Their cryovac packages aren't blade tenderized. I also hate that they tenderize cuts that have no need of it.
By the way, those ribs are going to be great. Enjoy.

I suspect the tenderizing process isn't an issue with ribs and the final IT. But steaks is another story, unless you over cook them.

Sorry about the delayed final pics. The ribs cooked for about 6 hours and I got busy and forgot to update my thread. They were good, but I'm not sure I could tell the difference between them and USDA Choice ribs.
