My first low and slow & Happy 4th everyone

This was my first attempt at a low and slow so I decided to go with a pork butt. It was very windy off and on here today so temp would go up and down. Started off with it set at 250 and it held good until the winds started and it jumped to 270. Got the vents adjusted for winds and then of course it dies down and the temp dropped to 230. It was good experience learning to adjust the vents. Here's a picture of the finished product.

My XL has a natural low of about 270 - you could have just let it ride at 270. -
