Pork butt

Options
had two butts. Wife wanted to take one to work. I semi-turbo'd them about 300 degrees today. Left my thermopen at the camp so just cooked by feel. A little more done than I prefer but I had injected through the cryo last night so they stayed moist. Add a little joes KC bbq sauce and some of my homemade candied jalapenos and not a bad plate.

    Interesting bark - do anything special? Hard to believe but I'm egging my first butt tomorrow since I did 6 of them in 2 days back in September. I was a pullin fool!

    Nice choice on the sauce, though I prefer Arthur Bryant's sauce on pork. Great cook though. I might start injecting through the cryovac . Good call

    Not sure why injecting would have made a better bark unless it was high in sugar content and there was so much injected it oozed out. I trying a new rub tomorrow - new to me any way called Southern Soul Dust out of St. Simon Island, GA. Ever hear of it?

    Mixture of apple cider, soy sauce, worcestershire, salt, and brown sugar. I simmered to dissolve the sugar and salt. Then let it cool. Worked great. Had I not injected, I would have screwed this one up cuz I went a little over but it was still juicy.

    My bad, i didnt mean to insinuate the injection helped the bark. That was just the only thing I did different than my usual process. The rub was meat church honey hog and has a lotta sugar. Im sure that had lots to do with the bark.

    Then it sounds like a boo coo of sugar in a rub will produce that bark. Being a type 2 diabetic then I will revert to my other rubs. Thanks for your second opinion.

    Yeah, they were good but I prefer and little thinner and lighter bark. Probably going back to yard bird next go round. Seems to work the best for me. 

    I had left my thermopen at the camp and was winging it anyway. I intended (originally) to pull one and wrap it (kinda riff on an APL recipe) but had no way to know when to pull it so I just changed plans in the middle of the cook and turbo'd it. 

    Like I said, they were good but I'll do something different next time. And I ordered a spare thermopen yesterday. Screw that, I'm gonna keep one both places from now on.

    It is. It's loaded with sugar. If I accidentally let the temp get up it burns very easy. Not a big fan of honey hog.
