First spin, not sure what to expect, so I made a true 'cool / hot' zone by adding a half stone to my spider.
Spinning @ 350 degrees
Pulled and resting
Finished baby backs were so tender and juicy with just the right amount of char ... they turned out awesome!

Looks great. Nicely Done!!!!I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

What happens if you're distracted and they get a little too tender?

Nice work. Yeah I am 2 cooks I and the setup needs some tuning. I think @dredger said no pan and just lay a bed of coals so for my 3rd that's what I will do, and literally set and forget. I have been opening my rotisserie cooks way too much.Seattle, WA

Guys, this ain't rocket science. Full bed of coals, set it and forget it. No offset coals needed. Good looking ribs. Even indirect, it turned out good. We're all learning here. Great eggcessorie.
