Chicken Cordon-Bleu - sort of

Dinner tonight is in the works, doing a take on Chicken Cordon-Bleu.  Flattened a couple of boneless chicken breasts, then cut a pocket like you would for doing a stuffed flounder.  Stuffed it with house made Tasso Ham and Swiss cheese, then coated with egg wash followed by Panko bread crumbs.

The small is set up indirect and coming up to temp right now (350 is the target).  These will go on for about 45 minutes along with a couple of sweet potatoes that will start in the microwave.  Should be a good dinner.  Here's the prep,
