I did one last night and just pulled. The extra hour is an extra hour in my math book. At least that's the way I calculated it. The one I did was an 11lb packer and trimmed out between 9.5 and 10. Took about 13 hours or so. Hope that helpsIn the middle of Georgia! Geaux Tigers!!!!!

I changed my clock before starting last night as I refuse to perform math while on vacation lol
At 8 hours in I got out of bed and mine was at 160 so i put it in the crutch with jalapeno juice. Today's going to be a good day -

Have you probed up closer to the point to see if that temp is consistent ? I only ask as i had to reposition mine an hour or so ago. I think we started right about the same time and I am at 187 to 193 depending on where i probe, but briskets are like a box of chocolates

Seems today is brisket day, I just completed hour 10.
That jalapeno juice idea sounds great, but I'm going to be using BP, not foil.

I have a few friends in TX and they suggested this method, this is my second one and if it is a good as the first I should be in a brisket coma before the 4 PM games kick off )

Haven't moved the probe yet. But thermopen has it pretty close in the flat and tip of the point. We're moving a bit now, after a short 4+ hours stalled.
Need it to tell me when it's like buttah. Patience, Grasshopper. Patience.

I have a brisket going too. Went on last night at 12:30 (time adjusted) at 225f. Its now at 171f internal temp.
