Stuffed Pork Tenderloin

Butterflied a pork tenderloin to even thickness and filled with mixture of sautéed spinach, mortadella, pecans, dried cranberries and smoked provolone. Rolled and tied, olive oil salt and pepper and onto the egg direct around 500. Along side is a sweet potato and chorizo hash with chives.  

Who needs a fatty cut for flavor?
