I'd go low and slow with just salt and pepper. You may have to wrap them in foil to keep them from drying out a ways into the cook. You want them so they are fall of the bone tender. They need to be about 200 degrees to get them that way.Dave - Austin, TX

They are "flanken" cut, but a lot thicker than when cut for kalbi. The term "short rib" includes lots of different portions. See here.

thanks for the info. Still holdin 250 with internal temp 145 at the 1hr. 15 mark. Going to cover with beef stock in Dutch oven to the finish.

Dutch Oven with bottom half a beer. Spilled top half. Beef stock and onion covered for the remainder.

These look interesting to me. I may have to ask my butcher about this cut. I'd be tempted to go low and slow the whole way and render as much of that fat as possible. Can't wait to hear how they chew and taste! Dutch oven is hard to beat when cooking beef short ribs.

I'm. Not sure I wouldnt pull them from the stock and finish them on the grid otherwise I think they are gonna fall apart on you and you are gonna have short rib pot roast.

Which butcher? I go through Stratford from time to time. I've seen that sort of cut in Zehrs before too but not often.Mt Elgin Ontario - just a Large.
