Chuck roast pulled beef

Going to do some real grilling tomorrow if call allows! I'm marinating a chuck roast tonight. Plan on firing up the small to 500, and searing off both sides of the chuck and then putting it in the Dutch oven in the large around 235 for a few hours. This is the same way my wife does our pot roast except inside with stove and oven.
Then im just settle the small in to 400 and do some chicken wings with franks.

We used to have farm family cow but have since ran out and moved. Kroger had some good looking roast this week. Really excited about the wings. Haven't had any on the egg in a long long time._______________________________________________XLBGE

This is exactly what I had planned for my cooks tomorrow. Pulled beef for sammiches. Even have a bottle of the Allegro hot and spicy ready to go! And chicken wings of course as well.

Why put it in the DO? Will cook fine just rubbed and cooked in the egg till 205 or so.

That will be good eats. Agree with @lit on straight on the grid but it will take way longer and a little bit different texture. Sounds like you are mocking a tried and true recipe from your wife. I smoke mine on low heat indirect with a water drip pan with a lot of smoke until about 160. I try to get 4-5 hours at this setting to soak up as much smoke as possible. Once you get past 170 plus the meat will dry out. I wrap at 160 plus for a few more hours till it turns into pulled beef. I use this process to use in chili and Brunswick stew. For a chuck roast dinner once it hits 160 I'll throw it in a Dutch oven with spices and veggies we want. Smoke flavor with the beef is awesome.

So for this day has rocked!!! Spending some amazing time with the family and the beeper hasn't been too much of a bother. So…. I have no plated or finished pics of the roast because I was eating wings and getting "the look'' from SWMBO to get the girls ready to eat. The roast was really really really tender and great flavor! Only thing I would change next time was use just plain Alegro Instead of HOt and spicy because it was a little too much for the family.
Seared on small, to the large in DO with top off for 2 hours and then covered for 3 hours. Then I just shut down the egg and left it in there until we ate._______________________________________________XLBGE -
Looks good, now I'm hungry. Need to cook for SWMBO before she gets off work.
