Al Pastor Pulled Pork

Options
With all the pulled pork we had for leftover I decided it was time to make some pulled pork tacos with al pastor flavors. Used the following stuff mixed with about 2 pounds of pork and left to get happy for 24 hours.

1 can of chopped up pineapple, drained
1 onion, finely chopped
1 TBSP of Cilantro
1 TBSP of Spanish Chili Powder
1 TSP of Cumin
1 TSP of Oregano
3 gloves chopped garlic
1 TBSP of Olive Oil
1/4 Cup of White Vinegar
2 Chipotle Chiles in Adobo Sauce finely chopped
1/2 cup Orange Juice
Salt and Pepper


Heated up some corn tortillas in a skillet and added queso fresco and sour cream. Plated with a side of black beans, tad of cheese and spanish rice. You could serve this stuff on a flip flop and it would still be amazing!
