Mega Mini Night (pic intensive)

Just like @Chubbs mentioned earlier, I too am an "original" mini guru. The size of the grate makes it perfect for frying, and it's versatility and efficiency is crazy good. Whipped up a bunch of stuff on it tonight.
Mixed Italian veggies (EVOO and Italian seasonings) followed by a high temp sirloin. The sirloin was seasoned originally in just sea salt and cayenne pepper. Grilled it up over a burst or two of apple wood for a nice sear. Then finished it post-grill with an after dollop of garlicky and herby butter.
After tonight's dinner was finished, we made some Chipotle inspired burrito bowls for this week's work lunches. Marinated some chicken breasts in a blended marinade of EVOO, Apple Cidar Vinegar, Onions, Chipotles in Adobo Sauce, Garlic, Cilantro, Salt and Pepper. Grilled those up and put bite sized pieces in a bowl along with some cilantro and lime brown rice, pinto beans, pepper jack cheese, pico de gallo, sour cream and a lime wedge.
Tonight's finished dinner:
