The greatest barrier against all wisdom, the stronghold against knowledge itself, is the single thought, in ones mind, that they already have it all figured out. -

I'm resting, beverage in hand as we go from 500+ to 275 for the brisky. This is so fun. In reality, I'm getting old and starting to feel it.Jeepster47 said:Yep, what Blake said ... looks awesome! Got to try a CI steak ... it looks great.
You can't beat the buttery crust! -
@NPHuskerFL There was a cattle trailer out back today with 3 cows about to meet their demise. That place has great steaks they cut to order. The butt was in a plastic bag. The only cryovac was the brisket.edit: yesterday. Stupid drinking all day.

That's impressive! Lots of fun and fulfillment filling up the freezer with your own prepared meats.
Any road will take you there if you don't know where you're going.

Look at that toy. Nice. And don't tell me you have an inspection camera to take a fast look down the glory hole on a low and slow. That would just be silly

Man all I have cooked is a 2 pound porter house and tomorrow I am just going to cook a couple slabs of spar ribs. I think I will just cook them uncut for the hell of it. Nice haul by the way @theyolksonyou .XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.

@theyolksonyou What's the name of the slaughter house where you purchase your food? I usually buy mine at the Butchers market on Cleveland Hwy in Varnell.

Sheriff's Food Processing in Calhoun. I'm down that way for work several times a week so I keep a cooler in the trunk. I go to the Butcher's Market too. It's 5 minutes from home. Calhoun is cheaper and has a better supply. There are literally animals awaiting death there. Not for the faint at heart. But they cut steaks to order and have about any cow part, including the head and most pig parts along with duck, fish.... -
@theyolksonyou Thanks, i might have to go to calhoun to check them out.
