A Decent Tuesday

I was awoken by my phone early this morning for an emergency on a walk-in cooler. So, after all the repairs and getting the box tempting back at 34℉-38℉ I was able to call it a day. And because I started so early it allowed me to have more time to cook.
Went with an almost 5# Chuckie, asparagus and sweet potatoes. And whilst I cooked HuskerMaMa baked about 3 dozen forever soft (I believe that's the name at least) homemade/from scratch gingerbread cookies (oh my they are to freaking die for!!!)
MM with RW and a chunk of Black Cherry for smoke. Dialed in to 275℉-300℉
Seasoned with S&P and snipped up fresh rosemary, thyme and sage and finished w/ a lilitte butter.

That looks great man. I have never done a sliced chuckie before- always pulled beef or pot roast. It looks really nice sliced.What IT do you cook to for slicing?Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

@SmokeyPitt I went to 198℉-202℉ IT and then pulled placed butter atop and a short rest. The crust was incredible and it held together pretty well for slicing.
Tried to get all @cazzy but, HuskerMaMa wasn't wanting to do a photo op last night. :((
