Tots wrapped with bacon and topped with shredded Pepper Jack
Cooked 425 indirect. The wings were pale because of no smoke. I didn't want to overpower the tots with smoke. The Pepper Jack was a nice addition to the tots

Bumping this thread. Finally felt up to egging, and wings and tots seemed like the perfect cook. Used my new bag of Fogo - I like it, huge pieces of wood. As in, identifiable pieces of tree in that bag! Also used a new cleaver I got, which made prepping the wings dead simple. Some of the tot shots got a piece of jalapeno in them - I would amp them up even more next time with some tabasco or Frank's. They were delicious - the bacon took in a little of the charcoal flavor.
