The last time I tried this I feel like It was good but was cooked past where we like it and out of the deep pink-purple and just rosey. This time I was going to still follow the reverse sear, but only at 200, and for half the time, 30 minutes indirect on the salt block. I had already salted the cow and worried that it may be overkill. It was SPOT ON! Looked great, taste great, pear salad and some Stone IPAs. imageimageimageimageimageimageimageimage Go Bucks!
