The last time I tried this I feel like It was good but was cooked past where we like it and out of the deep pink-purple and just rosey. This time I was going to still follow the reverse sear, but only at 200, and for half the time, 30 minutes indirect on the salt block. I had already salted the cow and worried that it may be overkill. It was SPOT ON! Looked great, taste great, pear salad and some Stone IPAs.

Excellent looking steak! To ensure consistent results, cook to temperature instead of time. Seriously though, that slice looks cooked to perfection.
