Steak and scallops

Options
Felt like a little surf and turf.  Picked up a hanger steak and a few scallops.  Hanger steak and the CI skillet went on direct at 400-450, cooked to IT 128.  Final temp after rest was 132.  I made a red wine and gorgonzola sauce for it.  Let the egg get real hot, and while the steak was resting, scallops went into ghee in the CI and seared for a few minutes on each side.  I cooked with no DFMT on the egg like some others have mentioned recently, I have to say I liked not fiddling around with it.
