XL BGE - S BGE - KJ Jr - HB Legacy - BS Pizza Oven - 30" Firepit - King Kooker Fryer - PR72T - WSJ - BS 17" Griddle - XXL BGE - BS SS36" Griddle - 2 Burner Gasser - Pellet Smoker -
CI sear on the stove top.

@cazzy did a step by step:If they are really thick (1.5"+) I like to combine a sear with a medium-low temp (275*) oven roast. Either sear first, or at the end (reverse). Similar to the egg, just use CI pan for searing.Crack the windows and disconnect smoke detectors. Don't ask me how I know...They/Them

What Spaightlabs said and if it's thick finish it in the oven. Hope the little one is better soon. ;;)Every day is a bonus day and every meal is a banquet in Winter Springs, Fl !

I crank my stovetop CI griddle to about 450-500, and sear away, as @DMW said, disconnect smoke detectors and turn on exhaust fan/open windows. YMMV

When you hit the CI with the steak you will be tempted to flip it pretty quick. don't try to flip it if it is sticking - once it caramelizes adequately it will release. It's a meat miracle.

@Spaightlabs , @blind99 , @SGH , @theyolksonyou , Thank you all for the kind words. I was really leery of getting the dark crust on the steak, but it ended up a terrific medium rare. Great low maintenance, quick protein. Thanks again for all the help!XL, JR, and more accessories than anyone would ever need near Olympia, WA
