Sunday Brunch... Bloody Marys to Grilled Oysters

Doing a little brunch today...
Started with some Bloody Marys using Zing Zang & Titos, then some lox and bagels, eggs and hash, and I've got a pot of chicken & Andouille jambalaya ready to go as well...
Picked up a crab pretzel at Wegmans along with 2 dozen barrier island oysters that both will be egged in a little bit..
Based on how the Steelers are playing, I might start to omit the Zing Zang for the rest of the day... killing me :(

@SGH will do...basically they cut the top off the entire pretzel to create a flat spot where they then mound up the crab mixture.
Question for you... How do you grill your oysters? I was thinking about just grilling them till they open and then taking the tops off and putting some butter and cocktail sauce on them. I did the Drago type last time, but shucking was a pain in the assMSV Chill Spot

I always shuck them my friend. I have never tried to grill one whole and unopened. But basically I shuck and cut the oyster free and transfer it to the top shell for cooking. I lay the shucked oyster on the very hot grid and watch him, at the first sign of bubbling I shower them with melted butter and parmisian cheese and a sprinkle of parsley. From this point I watch for the oyster to start to "curl". The second he starts to curl I remove him. Cutting them free and placing them in the top shell makes them easier to eat as the oyster is free and unattached from the shell. Also you can control the level of doneness cooking them this way as you can see them as they cook. I may try some whole though just as a comparison. But thus far I have always shucked them my friend.Location- Just "this side" of Biloxi, Ms.

HapBest way to cook those oysters is indirect set up, unshucked, covered with a wet croaker sack if ya have one and then just let them pop. Just like a clam bake.In the middle of Georgia! Geaux Tigers!!!!!

Thanks... I was thinking of doing them unshucked and just let them pop; but since this was only the 2nd time I've done them figured I'd go with what I know. This way allowed the butter cheese topping to melt and char a little.bo31210 said:Hap
