Back on topic....no sous vide, Blackstone gas fired pizza machines, or T-shirts...that's a damned fine looking cook. Over charcoal. We'll done....errr, executed!When I'm not Eggin', I'm scootin' Eggin' and 'cueing from Temecula Ca; an hour from San Diego, an hour and five minutes from Palm Springs, and an hour and a half from Los Angeles (yeah, right. With THAT traffic?)

I didn't use anything but Ozark Oak. It cooked about an hour or so. I usually get a little more fancy and make my own rub and put wood chips and all that jazz, but I didn't have much time after work so I just used Plowboys bovine bold and a little everglades then indirect for about an hour and then pulled PSWoo and seared all sides. I usually make my own rub with rosemary and lemon pepper and few other things, but that plowboys was pretty good.

That is some great looking prime rib. I have eaten prime rib at very high end restaraunts that didn't look that good. If you don't mind me asking what was the weight of that? That one was 4lbs. I just go see what kind of steak is on sale at the store and then just ask the butcher to cut a roast whatever size. Last one I did one 5lb new york strip. I just cook it low temp til internal is about 115 then pull it and let it heat up to 500 and direct sear all sides.
