Overnight extravaganza begins! 18 lbs of butt for a party the lady and I are going to tomorrow. First low and slow on my new (used) large that my buddy sold me for a very nice price.

If I post some pics of my vent settings, can y'all critique? My temp has crept up to 255 was really trying to keep it below 250.

What time do you you eat? Have a cooler, a few towels and some foil ready if it finishes early. Wrapped in foil, wrapped in towels and into a warm cooler will keep it hot for hours if it finishes early.__________________________________________It's not a science, it's an art. When using the maverick trust its temp or the dome. Don't try to reconcile between the two or it will drive you nuts. At times the gap might be 25 degrees like you have now and at other times they will be nearly in sync. That has been my experience at least.

Fyi, I'm sure you were fine, but next time to take the worry out of it you'll want to light it and get it to temp and let it settle for a half hour to an hour, once it's settled you know what the temp is. Then you can plop your meat in shut the egg (assuming your daisy wheel didn't move) and forget about it. The temp will fall since you opened it and it will be a little lower after a few hours till that cold meat heats up, but it will eventually come back to (or close to) that initial temp.
I always used to fiddle with it and I ended up chasing temps (and having to get up throughout the night), but now I sleep carefree. Enjoy!Dunedin, FL -

I keep 250F with your settings plus a little less on the top vent. 9 1/2 hours consistent. Enjoy the porky goodness!
