St. Louis ribs on new AR/woo

I received my AR woo ckmbo yesterday, and with Labor Day weekend, I am cooking up some St. Louis style ribs. 4 slabs to be exact. Two slabs with s&p, two with Memphis dust. 225 for 6 hours is the goal! Pics to follow!

This is my first cook with it, and so far it's great!! It was nice being able to just slide the grids in with the ribs already on them!

@lousubcap I saw a XXL today at my dealer, and it has some MAJOR real estate. Think of adding this setup to a rig that size!!! You could cook some lbs then!!

@SGH I am going to try and finish without rotating the grids. The bottom two slabs will be wrapped with foil and parkay/brown agave sugar/rub here shortly. Only for about 45 minutes though. The top grid is going to stay as is...will update shortly.

Question....how long do jalapeno poppers take a indirect 225-235? Gotta get them on at some point.

I can't help with that one. I always cook them raised direct and very hot. Never tried them indirect that I remember. Sorry.Location- Just "this side" of Biloxi, Ms.

@fusionhq-indirect at around 350*F takes about 45-60 mins. I would guess at your temp you could be looking at a couple of hours til the bacon is finished.
