Corn cobs for smoking???

Sitting here watching Cook's Country and they're doing baby backs on a Weber kettle and using fresh corn cobs for smoke. They say this is common in S. Dakota. What say Ye here on the BGEF? Worth the effort? Kimball said they were as good or better as any they've made.

I have never tried it myself. But I'm always open to new ideas. Hope someone can elaborate on the subject.

They cut the corn off half a dozen cobs and threw them in w/ the charcoal. Seemed pretty straight forward. They gave the name of some guy out in S. D. who is the C-cob smoking guru. I didn't catch the name.

The cobs would need to be dried out for a while if you are using sweet corn. Feed corn cobs would need a little more drying to, because they still have some moisture to them a harvest. From the forums if seen it's a South Dakota thing mostly. I will stick to the normal fruit and nut wood's to smoke with.

I saved some cobs last year after parboiling them, and cutting off the kernels, then pressure cooking them for corn broth. When dried, didn't add much flavor, which was good, because I didn't like it.

This year I after cutting off the kernels, I tried drying them. After 2 days in the garage, they were half caramel brown, but surrounded by fruit flies. Decided to pitch them.

Will pick up some field corn later in the season, and try w. kernels both on and off.

I grew up in South Dakota and never heard of the practice then.

However, every Christmas I treat myself to a Harrington's Ham  Harrington's which are smoked over corncobs and the best ham I've ever had.
Hope I don't get banninated for buying a pre-smoked ham, but its a tradition for me anymore...

I have never used them for smoking but I did save some cobs when freezing sweet corn this year and made two batches of corn cob jelly. I really liked it and will make it again.

@SGH‌ Yeah I'll try to find the recipe I used and post a link. It tastes a lot like honey. Make some biscuits and butter them while hot and then corn cob jelly inside. It is awesome!

Would love to hear the details.  I throw earns of corn on the egg all the time - un-shucked - and they are awesome and almost impossible to mess up.  I will be doing this as one side for dinner tonight (beef ribs) as a matter of fact, and also on Monday.  But cooking with them?  Do tell.

I feel a whole lot more like I do now than I did when I got here.

Keep in mind, Kimball says that about everything they cook. :)

I hate it when I go to the kitchen for food and all I find are ingredients!
