Here is something a little different. I roasted pepper and made a pineapple / roasted peppers salsa. Then used the pineapple rind as a plank to grill some grouper filets. I seasoned the grouper with S&P and topped it with the salsa mixture towards the end of the cook. The fish turned out flaky and had tons of flavor. I will definitely try this again!

Yeah, I'm gonna have to do that. Unless I'm mistaken, it hits the cooking triple crown - not too hard, great taste, and has a "wow" factor that will provide automatic discussion at a gathering.

Looks great. Ive had pineapple make pork kinda mushy, I'm a little surprised it didnt do that to your fish. Awesome, nonetheless.
