Here is something a little different. I roasted pepper and made a pineapple / roasted peppers salsa. Then used the pineapple rind as a plank to grill some grouper filets. I seasoned the grouper with S&P and topped it with the salsa mixture towards the end of the cook. The fish turned out flaky and had tons of flavor.
