I did one for Easter that was one of the tastiest things that I've ever made. It was super easy..Probably a 3.9 lb. Pork loin. Rubbed with Olive Oil and put on a layer of granulated garlic, some Bad Byron's Butt Rub, and some cracked pepper.I used a PS, legs up, and put a roasting rack on the grate. I put in 2 or 3 hunks of pecan wood for smoke. It cooked for about 2 hours at 375. When the internal temp got to 130 I brushed on a little orange-chipotle glaze on top. Within 20 minutes it was at 145 and I pulled it off, wrapped it in foil, and put it in a cooler for an hour or so. Some would say skip that step but we had some more prep work to do for dinner.Lubbock, TXLarge BGE

On -- One other thing -- it marinated 1/2 cup of soy sauce, brown sugar, and a little splash of bourbon for 8 hours prior. My mom always made a Christmas Pork Loin with that marinade and I wanted to try to replicate that flavor..On the surface all of those things don't seem like they would go together but it had some complex flavors. It was pretty nice.Lubbock, TXLarge BGE

I did one where I butterflied it, pounded it flat, layered fresh mozzarella, baby spinach, roasted garlic, pepperoni, sliced tomatoes, oregano, and pizza sauce. Rolled and tied it, brushed exterior with pizza sauce, cooked at 350 indirect until internal of 135. It was awesome. The Dude: This is a very complicated case, Maude. You know, a lotta ins, lotta outs, lotta what-have-you's. And, uh, lotta strands to keep in my head, man. Lotta strands in old Duder's head. Luckily I'm adhering to a pretty strict, uh, drug regimen to keep my mind, you know, limber.Walter Sobchak: Nihilists! *uck me. I mean, say what you want about the tenets of National Socialism, Dude, at least it's an ethos.
