I'm with the other guys, you need to patent, market and manufacture or sell the idea to someone who wants to take on the task! That is very very cool!! You would sell a bunch of those. PID is the way to go. I built my first sous vide (fish tank) rig with one. I have a few spares in the shop for when I need to put in some controls for an oven. I've been powder coating lately with a motorcycle project.

Very awesome! I was actually just looking at attempting to build the HeaterMeter (don't kill me for this link, http://tvwbb.com/showthread.php?35674-HeaterMeter-v4-0-for-RaspberyPi-Standalone), but this is customized for the BGE, which I love! It's great that it uses a PID(-ish) controller, you can see it start to close when it is approaching the target temp so it doesn't overshoot. Excellent.
Are you planning on releasing design docs, spec sheets, and code under GPL? Either way, very awesome job and I'm sure this must have been very rewarding for you to do!

If you ran it at 500 for a few hours, it's possible that there could be an issue. However, you only need the controller when you're doing long cooks, which always correspond to temperatures less than 375 or so (in my experience).
