Spatchcock 15 lb turkey ?

We cooked a 15lb fresh turkey spatchcocked last Thanksgiving and it was awesome so I am planning on doing it again.
I forgot how long it took approximately. I normally cook the 4 -5 lb chickens raised direct but a 15 lb bird in a LGBE does not fit raised so anyways I am planning on 350 direct with some pecan chips. Does 2-2.5 hours sound right for a 15lb bird?
I need to get another Egg for the side dishes one day. I guess I could cook some the night before but how will they come out reheated the next day?
Got any gravy recommendations since there will be no drippings from the bird to save.

I did a 21 lb turkey raised direct at 400 dF and it took less than 2.5 hours. This was on a LGBE.

I do 11/12 lb spatchcocked raised & direct @ 400 in about 1.5hrSalado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

May have to get creative - inverted v-rack or tuck the legs in more - I did it last year and it was awesome - I just forgot how long it took so I can get an idea when to put it on.
