Canada Day pork chops!

Happy Canada Day !!!!

Cooking some 1.5 " pork chops today indirect at 250 for a bit to get some smoke than dropping down on the spider for a sear later.Also have some potatoes and veg going along for the ride:)

    I thought you were just cooking in the dome, rather than the base, with one of those new fangled adjustable thingys.

    Just learned not to reverse sear at 600 without oven mitts on....damn this thing is hot!!!!!
    I was also talking on the phone at the same time not the brightest idea.
