Always made something closer to a puree:In a saucepan, lightly saute the cauliflower with salt and pepper in fat (butter, oil, or - our favorite - bacon fat), until it just starts to brown. Cover the cauliflower with a 50-50 mixture of water and stock of your choosing (we use chicken), put the lid on the saucepan, and boil until cauliflower is fork-tender. Drain the cauliflower, transfer to food processor and blend until the mixture is just smoothing out, being careful not to overblend.[Northern] Virginia is for [meat] lovers.

My wife has one. I'll try to get it. We prefer it to potatoes. It's very good.Be careful, man! I've got a beverage here.

Last time we just stuck it in the food processor and then in the micro with some butter on top for 3 minutes stir and serve.Lynnwood WA

I did one a while back also where I steamed the cauliflower with garlic cloves also, threw it in the Kitchen Aid and let her rip for a while a little butter added (trying to be healthy) and some Salt&Pepper, and Parm Cheese.
Came out pretty good.

+1 for Tuttle871 recipe. I remember someone roasting the cauliflower on the egg first, but can't seem to find it.

I always steam the cauliflower in chicken broth- mash with butter and Parmesan. I have also lightly steamed it to where it was still a little crunchy and chopped it up and used it like rice for my lettuce wraps and stir fry.Every day is a bonus day and every meal is a banquet in Winter Springs, Fl !

I steam the cauliflower first. Then I take a sleeve of crackers and crush them (semi fine). Throw crackers in with the cauliflower and add butter to your liking (I usually use half a stick). Then mash them all together with a potatoe masher. Salt and pepper to taste.

Griffin- I make the mashers similar to taters- Butter, salt, pepper, garlic powder, etc and then hit it for a spin in the food processor.I highly encourage you (or anyone who will listen) to roast seasoned cauliflower in cast iron on the egg (or oven). It get's an amazing caramelized color and the flavor is amazing! It taste's like so many different things, but not traditional cauliflower. Here is an example of a comfort food style hot dish I recently did-Good luck- PProud resident of Missoula, MThttps://www.facebook.com/GrillingMontanahttp://grillingmontana.com
