Ribs are on using Wicked Good lump.  Keeping my temps 280 - 300 range.  First 90 minutes temp has stabilized at 287.  I think I will leave it there to see how the WG lump performs.

  • Usually, however, this time I am laying them flat on the grill using an additional raised grate for the second level.  I just rotated the bottoms to the tops and they looked great.

  • Just ordered five bags of WGWW from Ace...found a coupon code for save $20 when you spend $100.  Will definitely have to check in on how you like it and how it does...I too have never used it.

  • My brother makes a rub called Guido Dust. It has about 14 different spices.  He sent me some for Christmas, but he won't tell me the recipe, he knows I will post it.

    Looking good, even if you used the magic mystery "Guido Dust", cool name. So now it has been served, how were the ribs? We need details of the taste.

  • The ribs were unbelievable.  I kept the temp at 280-288 for most of the cook.  I did the 3-2-1 FTC which never fails.  The Wicked Good was OK, nothing spectacular.  There was more ash than I expected, how ever the temp stayed consistent once I got it stable.  I got it for a great price at ACE and I am satisfied.

  • Is there an advantage to using a vertical rack Vs. lying flat on grid? Just got a rack for X-mas.
  • This was first time I laid them out flat and I was very pleased with the results.  I have also had great luck using a vertical rack.

  • I usually lay them flat, only because I did not have a rack. Either way if you are Eggin' and eating ribs, how can things be bad?!
