Canadian Bacon Help!

I smoked my first ever Canadian Bacon tonight using a recipe I got from the book Charcuterie. The flavor turned out awesome. It tastes just like ham, but falls apart when I cut it. Is this normal? It definitely doesn't have the texture of store bought Canadian bacon...but I like the flavor a whole lot more.

Ok...thanks. I wondered if it needed to cool down. We couldn't stay out of it when it came out of the egg.
