Asian style pork butt

I want to do a pork butt tomorrow night. Have 2 8lb pork butts aand have read some posts about bo ssam. What is the approximate time it will take to cook. Do I cook with fat side up or down? Does anyone have a suggestion for a good Asian glaze to finish it of?

Approx 2hrs per pound at 250 degrees.

I did a killer char siu a while back and I know Howdy Doody did one back in the day as well. I'll dig out the recipe but Google Char Siu and you'll get some great ideas. We have been wanting to do it again but just haven't gotten around to it. I stole a recipe right off Google so start there and see what you find. it was out of this world. maybe Howdy has his recipe handy...........unless it was Mickey. Pulled pork Bo Ssam. Pork, bibb lettuce for wraps. Ginger Scallion sauce and korean spice called ssam jiang. 8lb pork butt cooked for 10hrs on the Egg at 250 then wrapped with brown sugar to finish. Had a few Korean friends over as well as some friends who had never had Korean food and they all flipped out making the wraps This morning made steamered buns and made pork sandwiches Thanks for responding
