Cast iron grate or reg???

I do bacon wrapped skewers with tony cacheres and brush/pour butter on them while they are cooking. Obviously Caheres isn't necessary. Anyway they turn out good for me. I usually use mesquite for my shrimp and scallops just a preference thing, but I am sure any wood charcoal is more than sufficient.

Thanks Tweev, the bacon and fried sound great, but the wife is on a diet. Gonna have to get creative w my side of the plate.

Sounds good Newport, I may just have to cook mine to my liking And she can handle her's her way. Bacon, butter, garlic is sounding like the way to go.

Cast iron grid....just a bit of sea salt and cracked pepper, quick sear on each side...
-
How about this:
Thanks. This might just be it w a lil swamp venom on them.
-
Quick sear it's going to be. EVOO, sea salt, cracked pepper. Sure wish I had a MINI for this.
-
Tweev, this gives me time for a few beverages on the deck and also time to explain to the lady (WE) need another Egg.

Just opened a red bag of RO w some very nice pieces in it. Picked up two canisters for the mapp yest at home depot and the guy working there told me it was overkill. I laughed and proceeded to check out.

He obviously doesn't understand.

How hot does this machine need to be for a quick sear? 400-500?? For the scallops that is...
-
When I think sear I think lava.
-
I would say in the 500 range for quick scallop cook...are you at stock grid height or searing on CI on spider?
-
Cast iron on fire box. Got up to 500ish. I had the lid open a good bit.

Very quick meal. Egg got up to temp very quick and the food was on and off in no time. THANK YOU all for the quick response!!! Now, to get a small or a mini? Decisions, decisions.
-
I really think the mini is the way to go, but the "small" crowd puts up a good argument. I don't want to regret not getting one or the other.
-
Wow!! Logical. But I have a 10 month old so i prob should stick to 1.
-
I am buying another egg in the next two weeks. I have a 9,7,5,and 3 year old. I love them and love my mini. Hey people have to eat.

Just a hard sear with salt pepper and olive oil is all you need with a good scallop. Tweev is correct- In a pan on the stove. Butter is better but EVOO works just fine.Keepin' It Weird in The ATX FBTX
