NEW BGE OWNER NEEDS TIPS ON COOKING EAGLE RAY
Just back from Aligator Beach, FL where I caught a 23lb Eagle ray. Got two nice fillets but need help with how to cook them.
I will post photos when I do. Has anyone done this?

OK, lived in Florida for 30 years and never heard of Aligator Beach. BTW it is Alligator. And I never hear of anyone eating a Ray. So what's your deal?

Sorry, I'm a terrible speller. It's actually Alligator Point, FL. About an hour south of Tallahassee.
A friend of a friend cooked this for a group of us years ago, and it was awesome. But I have no
idea how he did it. I have attached a photo of one fillet.

I believe I was mistaken, looking on the internet it looks like a skate, not an eagle ray. I am finding
recipes for skate.

A Skate is a shark. Lots of shark recipes.

Doc_Eggerton, it may be in the shark family, but it resembles a sting ray with a short tail and no barb.
The closest thing I can find on the internet is a rio skate.

Eggasm, you most likely have a Cow nose ray on your hands. I have killed at least one of every living species within a one hundred mile radius of A. Point. I grew up in Gulf Breeze Fl and my family has a beach house in Lanark Village, FL.If you post a pic, I can identify for you. Most ray tastes good if you ball it in the size and shape of a bay scallop and fry them suckers. Tastes just like a scallop. Same texture too.Be careful, man! I've got a beverage here.

I looked up a Cow nose ray. This one had a much shorter tail, but close otherwise.

Well, I've heard that rays can taste like scallops... so one method would be to cookie cutter the filet up into scallop shapes, and sear like scallops with a bit of salt/pepper... I'd do this in a CI skillet with butter though imho... but you could do that on the egg...

That's a skate. Cut the wings off, peel the skin off (use pliers) and cookie cut or melon ball, then fry fry fry.
Plain ole sting ray is my fav that way.Be careful, man! I've got a beverage here. -

wrap in bacon and try grilling a few.

Yea, when I looked up eagle ray, I thought whoops. I really messed up on this post. Rookie mistake. In
the future I'll only keep what I know......... reds, trout, flounder, mackerel, etc.

Well, to be honest, I was not expecting it to be very good, but I was really surprised. First I cut pieces about 3/4" square. (I didn't have a cookie cutter) Added kosher salt, fresh ground pepper, and garlic powder and pan fried in butter. (first photo) I had my wife try them first. She liked it, so I tasted one and they were really good. Tasted to me like a combination or scallop and chicken. Even my son liked them, and he is extremely picky.
Then we wrapped the rest in bacon and grilled them on the egg. (second photo) They were amazing. Of course anything wrapped in bacon and grilled tastes great. Also fried a 21" speckled trout I caught yesterday and made cheese grits and deviled eggs. My daughter and her boyfriend joined us and we all overate. No complaints.
