tequila lime chicken

Been a while since I posted a cook. Got the urge for some tequila lime chicken. Instead of cutting the thies up in small pieces, I deboned them, cut out the fat and connective tissue, and marinated them several hours. Wrapped them in cheap bacon and put them on the small at 350 indirect til they were 195 internal, basting with the marinade toward the end.
Served them with an orzo salad and sauteed mushrooms.

Thanks Elizabeth, the marinade is from Kroger. It's the store brand, very tasty stuff. Forgot to mention after I wrapped in bacon, I coated lightly with Bad Byrons before putting it on the grill.
This is one of our favorite ways to do chicken. -
Mickey, the redness may be because I added a piece of apple wood early in the cook. I didn't impart much smoke because of the high temp though.

Thanks, it can be a lot of work. That's why I opted to leave the peices whole instead of cutting them up into pieces. That alone cut the work down by 2/3. To make it even easier I could have bought deboned and skinned thies. I really dont mind it though.

Elizbth, the Kroger brand is good but I'll bet some of the recipes online with fresh ingredients would even be better.
