First Armadillo Eggs

Have always seen these on the forum and at Eggfests but have never even had a bite. I used fresh jaleps, Tillamook Cheddar, Owens breakfast sausage and some Rudy's rub.

Ready to go:

Indirect at 350, with a small Hickory chunk:

Just under 30 minutes later, off to rest for few:

Plated with a little drizzle of Plum Chipotle sauce:

Very yummy little lunch.

It is Texas response to Scotch Eggs, but instead of having a hard boiled egg inside there is a cheese filled jalapeno.

Here is the ingredients for Scotch Eggs
hard boiled eggs
pounds pork sausage
dried bread crumbs
flour
eggs, beaten
Scotch eggs are fried, not baked and they are mighty tasty.

Oh I understand now, I lived on scotish eggs for a long time while in England......well actually while in the Pubs... :laugh:

All that matters is that it's not IN hunting season....I can probably make that. My parents both live up that way... a good excuse for a visit!
