After reading Mad Max's post below about oxtails, I was in the freezer confirming that the wife did not dispose of mine...Lo and behold there are 2 beef tongues in there too. I usually simmer them for about 4 hours in strong beer, garlic, onions, peppercorns, etc. for sandwiches.[p]Has anyone tried smoking them or done a lo-n-slo? Any other recipes??[p]~thirdeye~
