Smoked Tongue

After reading Mad Max's post below about oxtails, I was in the freezer confirming that the wife did not dispose of mine...Lo and behold there are 2 beef tongues in there too. I usually simmer them for about 4 hours in strong beer, garlic, onions, peppercorns, etc. for sandwiches.[p]Has anyone tried smoking them or done a lo-n-slo? Any other recipes??[p]~thirdeye~

i LOVE tongue, but i've never made it myself. ..my mom always did it the traditional way, simmering it for hours. . .why don't you put it in the pot like you normally do with the beer, etc. , only stick the pot in the egg instead of on the stove. ...after 4 hours, it should pick up some nice egg flavor. . .bet it would be excellent

Tongue is usually pretty fatty (one of the no, no's on a low fat diet). I would guess that it should work with lo-n-slo cooking. Please give us the results of your experience. I love tongue from the kosher butcher and would jump at the chance to do a lo-n-slo if your experience proves that's the way to go.

thirdeye, Now I really like that stuff at the Mexican restaurant, chopped and put into tacos, but I know nothing about it. Except didn't I read somewhere that you have to boil a for a while and then "peel" em?

Greendriver,[p]Tongue is very popular in Mexican dishes and also in Basque
cusine. You do have to peel it and I'm thinking along the lines that some degree of simmering will have to be done first, then peeling, then a simple rub, (and possibly wrapping in bacon, or using a vinegar mop) then on to the Egg.[p]~thirdeye~
