I found this recipe in the search engine for homemade ricotta stlye cheese.

This is worth the effort. The last time I tried this recipe it cost about $16 for the cheese alone.
I used this recipe for the cannelloni.

End up with this
After a night in cheese cloth in the fridge, really tasty
Some homemade pasta
I really need a mixer
After a rest, the pasta was great to work with
Stuffed and ready to roll
Rolled up
Bechamel
Lots of cheese
Coming off the Egg
Some fresh bread
Dinner is ready
Plated
This turned out great. The ricotta was way better than store bought at a fraction of the cost. Really brings the cost of this recipe down

That is fabulous. It looks delicious.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

This was a bread machine recipe using the dough setting.
1 1/3 c milk
1 1/2 tsp salt
1 TBL sugar
2 TBL butter
3 3/4 c flour
1 tsp yeast
When dough is ready,form and let double.
I had the Egg running around 375/400 dome temp

Shane, cannelloni totally from scratch! I'm impressed. It looks great. I've made paneer, now you've got me wanting to make ricotta.

Shane, that's a terrific post and a fabulous looking meal! I found myself going back and forth from photo to photo over and over again. VERY Nice.
Could I ask what the yield was on the ricotta? One gallon of milk = "about how much finished ricotta?"

You are really making me feel like an amateur. Homemade pasta...homemade bread...homemade ricotta!!! Just tell me the sauce was from a jar!!! .
It looks wonderful! I am bookmarking this recipe. I will get the wife to do all the parts leading up to putting the casserole dish on the egg .Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
