Quail Help

I have some quail marinated and ready to go for tomorrow night. Any suggestions on how to cook them? One possibility is to wrap them in bacon and glaze them with a bourbon and pepper jelly glaze.

Not in the mood to stuff them with anything heavy.

Ideas welcome and appreciated.

    Spatchcock them and cook them hot. Don't mess with the flavour. They are wonderful on their own.

    Raised diect. Not long. If you don't have a thermapen just push til there is a tiny bit of resistance. You don't have to cook quail to chicken temps
