Salt and Pepper.Thats it.One of the BEST Butts I've cooked in a long time.I put this on last night after cooking dinner.I did add some pecan chunks to the coals.

I've talked to a couple of guys in Q joints in NC. They said they don't put ANY rub on 'em. Not sure about s&p, but certainly no "secret recipe" stuff. Keep meaning to try it, but haven't. Yours sure looks good!

Nothing wrong with using old school methods, especially on butts and brisket. Many barbecuists just call it Dalmatian Rub. I make mine with coarse pepper, and fine sea salt, (and I have another batch with cayenne added) it takes a little care when seasoning because it tends to settle out in the jar...But here is an interesting observation on flavor, it seems to get better after it sits a week or so than when it's sprinkled on separately.Happy Trails~thirdeye~Barbecue is not rocket surgery -
